“TapeDeck is a powerful and fun new audio recorder for Mac OS X Leopard. It’s just like your old analog tape recorder, only better.” This is great for quick recording without converting, searching for source files or figuring out settings. And the old school interface makes it fun to use. The free version has limited recording time and quality, still cool though.
